Tiramisu Alla Grappa Spray


  • 4 eggs

  • 4 tbsp sugar

  • 500 g mascarpone cheese

  • a pinch of salt

  • 150 g sponge biscuits

  • 300 ml coffee

  • cocoa powder


Beat the egg yolks with the sugar, then fold in the mascarpone. Beat the egg whites with a pinch of salt to a stiff peak, and fold into the mascarpone mixture. Soak the biscuits in coffee and arrange in a serving bowl, alternating layers of biscuit and mascarpone cream. Sprinkle with cocoa and refrigerate. Serve well chilled.
